Our charcuterie range spans countless varieties of chorizo, traditional salamis, black puddings, artisan-cured panceta, cured pork loin coated in paprika to rich flavoured sobrasada spread from Mallorca.
So many different tasting products such as “chorizo criollo” garlic sausage, smoky flavoured “rosario chorizo” sausages, finest cured thick chorizos with fragrant paprika, thin long “chistorra” from Navarra, the thin traditional “fuet” salami from Catalonia, black puddings made with rice – excellent when grilled until toasted.
CHORIZO
Chorizo is marked out by its seasonings. It is typically made with lean pork and pork fat. Pimenton, top-quality finely ground red paprika, is its infallible defining mark and gives it its rusty red and aromatic character. Apart from acting as a natural flavouring and colouring, the pimenton’s essential oils help to conserve the meat. The pimenton may be mild or spicy-hot and smoked or sun-dried.
Alongside pimenton there is a blend of other flavours used to make chorizo – garlic, herbs, spices and salt. In the northern Atlantic region the tradition is to smoke the chorizo; in the Mediterranean to spice it; in central Castille, with high content of aromatic pimenton and in Andalucia and Extremadura it is pungent with garlic and herbs.
Chorizos are not only added to regional stews or eaten in sandwiches but
are also one of the most popular tapas.
Our finest cured chorizos lend themselves to many uses:
The “rosario” type, prepared in strings of sausages for grilling or barbecuing as a delicious tapa or for adding to stews or dishes to impart a rich flavour.
Or “Sarta” thin hoop-shaped cured chorizo rings, richly flavoured chorizos with no added preservatives, ready to eat as they are - just cut into steep diagonal slices.
Or “Gran Vela” the thick slicing chorizos, made in straight large skins (vela – as in a church candle), ready to slice (or ready-sliced), cured and served in a platter without the need for further preparation.
The range can be complimented by our range of olives and cheeses or together
with our excellent aromatic serrano and iberico hams, served thinly sliced.
