Spain has a sophisticated approach to canning and bottling. It has a magnificent variety of gourmet fish preserves.
Amongst our range, we stock Bernardo Alfageme products which are unique in flavour and of the very highest quality.
Located in northeast Spain beside the sea, they use only the super freshest ingredients, caught in their prime. Added to that, they stick to rigorous rules to control the quality throughout the different stages of the canning process, ensuring that the product reaches the consumer with all the marvellous qualities of the fish intact.
Fish preserves are famed for their high nutritional value, rich in proteins, minerals, vitamins, calcium, phosphorus and amino acids, which help control cholesterol levels.
White tuna (bonito del norte) makes the ultimate tuna salad, with the best mayonnaise, chopped spring onions and little gem lettuce.
Anchovies in extra virgin olive oil can be served straight from the tin on toasted bread rubbed with fresh garlic topped with ripe sliced tomato, torn basil and fresh black pepper. Or add some crushed anchovy fillets to softened butter with chopped fresh herbs and a little mustard to make a compound butter suitable for serving with grilled or roasted fish or meat, or add a few fillets finely chopped to a salsa verde or fresh tomato sauce to add a piquant character.
Preserved mussels in their various delicious sauces are a delight. Cockles, clams can be used tossed with fresh pasta or as a topping for thin tart and work well with olives, capers, garlic and parsley.

BOQUERONES - PICKLED WHITE ANCHOVIES
These excellent boquerones are white anchovy fillets in vinegar. They are ready to serve as they are or can be dressed with olive oil, fresh parsley and garlic.
