“Jamon Serrano” (cured ham from the
mountains/sierras
of Spain). A national delicacy made with natural rock salt to bring out the
flavour of the meat as it undergoes its slow, steady dry cure.
“Jamon Iberico“ (Iberian cured ham) is made in the same way from the semi-wild breed of pig indigenous to the Iberian Peninsula. The breed still ranges freely in the cork and oak woods of Spain, living on grass and acorns.
