Extra Virgin Olive Oils


The geography of Spain, with such contrasting terrains and climate, produces a breath of olive varieties, each with their outstanding features. There are over fifty botanical varieties of olives grown in Spain, each with their own remarkable properties and flavours. These are either offered as single variety oils or carefully blended together.

The dietary virtues of olive oil are well known. It is thought to be a significant factor in reducing the risk of heart disease. It is the only natural oil that is a fresh fruit juice that undergoes neither fermentation nor chemical processing.

Health experts recommend olive oil as the best oil for cooking with as it is very low in saturated fatty acids and is high in monounsaturated fatty acids – such as oleic acid. All olive oil is high in oleic acid but at 75-80%, Spanish olive oil has even higher levels than olive oil from other countries. It has an exceptionally high content of natural antioxidants, particularly varieties such as Picual and Hojiblanca.

Hojiblanca Olive Oil

This oil is gold or intense green in colour according to region. It has equilibrium of flavour, balances between bitter and sweet with a note of fresh grass. Elegant. Excellent for cooking with.

There are two types of Spanish olive oil in the UK market - extra virgin olive oil and olive oil. Extra virgin olive oil is superior to any other due to the fact that it is a natural juice produced by simply pressing the olives. The acidity level must not exceed 1%. Olive oil is a general name for a blend of refined olive oil and virgin olive oil with an acidity of not more than 1.5%.

Sherry Vinegar

Sherry vinegars are made within the sherry-producing area of Marco de Jerez from barrels that contained Fino, Oloroso or Amontillado sherry.

There are 2 types of vinegar: vinegar in which aging takes 6 months and Sherry vinegar reserva in which aging takes 2 years.

A choice ingredient that enhances the aromas and flavours of food. Sharp, strong, refreshing taste with the fragrance of sherry wood barrels and beautiful gleam and colour.

It is very strong – so only use a few drops in vinaigrettes or in meat dishes.
