PAPRIKA/PIMENTON DE LA VERA
One of Spain’s absolutely essential ingredients and the first pepper spice with denomination of origin status.
The spice comes from Extremadura, from one of the pioneer producing companies of the area under the LA DALIA brand, in the heart of the pimenton-producing region, Jaraiz de La Vera.
Pimenton de la Vera is easy to pick out from other paprikas – it has an unmistakable smoky aroma, a silky fine texture and a deep crimson shade close to ochre pigment. Mature peppers are slowly dried and oak-smoked and stone-ground in the same way for centuries in a tradition passed from father to son. It is in a class of its own.
Types of Pimenton:
Sweet (dulce) – made from small native cherry peppers (bola)
Hot (picante) – from the long pepper variety
The spice is used as an ingredient for classic dishes such as pulpo a feira (octopus), as the essential condiment to make “chorizo”, for marinating meat or fish and is sautéed all over Spain in soups, stews and to flavour absorbent potatoes and rice.
SAFFRON
Our pure saffron is LA MANCHA SELECTA,
of the highest order in quality saffron. This excellent condiment, with its
deep rich red colour has a strong and exotic scent and a lightly bitter flavour.
It is irreplaceable in Spanish recipes: to flavour rice dishes, sautéed
in soups, to marinated fish, game or meat and for classic dishes such as paella.
