You could assume fresh is best until you are served canned white Spanish asparagus in a top restaurant. Visiting Navarra where you see the preparation of vegetable products convinces you of the quality and artisan nature of the production.

Pimientos del Piquillo

Piquillo peppers are a case in point: in their natural state they are virtually inedible, but preserving transforms them into something sweet, silky and fragrant, with a little piquancy and a complexity of flavour.

Small (no longer than 10cms), triangular and with a pointed apex, these brilliantly red peppers are grown in Navarre. They have a sweet taste due to the area’s microclimate and the sandy soil.

In September and October, the peppers are roasted over wood fires. When cold, the seeds are removed. They are excellent sliced into strips and served with an olive oil dressing or traditional are stuffed with seafood and roasted.

Asparagus

Another distinguished product of Navarra. Fat white stalks of asparagus from a jar of brine – are very delicate in texture and flavour. These are delicious at room temperature, served with a simple dressing of extra virgin olive oil and a few drops of lemon.

Artichoke hearts

Artichoke hearts can be combined in the most delicious vegetable casseroles or salads.

White asparagus and artichoke hearts can complement a simple antipasto platter, but these vegetables are also very good to batter very lightly, deep fry and serve with either alioli (garlic mayonnaise) or tapenade.
